Warialda Belted Galloway Beef

Allen and Lizette Snaith (or “Ma & Pa Belty”, as Matt calls them) are salt-of-the-earth. They are involved in every step of the food chain, from paddock to plate: the sort of producers that make Matt so passionate about cooking.

They breed Belted Galloway cows, a rare breed of cattle, and feed them on 100% grass from various regions of Victoria. In fact, they move their cattle to the best feeding grounds according to their age and the particular needs of individual beasts. The meat is minimum dry-aged for 3 weeks. A simply brilliant product.
